I mostly do it now because harvested organs don't degrade overtime, and the surrogate ones I make with a bionics mod usually work at 65%, and after about 3 years into a Cassandra playthrough I wind up needing a good few surgeries. Bionic limbs aren't too bad, but organs are a different story.

All you need to harvest successfully and reliably is a hospital bed, a semi-skilled doctor and ACTUAL MEDICINE. Herbals will just kill your patients. There is a lot of overlap between cannibal, bloodlust and psychopath, to the point where I always only go with one of them personally.
